This week, Kokanee Quinn dives into the archives and is sharing a saucy sauce for saucy birds!  This Maple Bourbon Sauce is recommended to be used with goose, pheasant, wild duck and turkey.  The ingredients are:

  • Pan drippings from meat, about 3 tablespoons
  • 2 tablespoons flour
  • 1/2 teaspoon chile paste or 1 tsp. Tabasco
  • 1/2 cup water or stock
  • 1/4 cup bourbon
  • 4 tablespoons maple syrup
  • 2 tablespoons heavy cream
  • Salt to taste
