Great corn bread is a Montana staple. It goes with chili, stews, soups, or… Whenever I make corn bread, there are never any leftovers.
Cornbread is a southern staple. Great cornbread is a measure of what kind of cook you are. I have never made cornbread and had someone refuse to eat it. Hunting and fishing camps are better with fresh cornbread.
Since cornbread is so popular, I am always trying to kick it up a notch. Here is my latest Cornbread creation.
The only thing better than Cornbread,is bacon, so let’s combine the two.
First lay bacon strips in the baking dish, Dutch Oven, or cast-iron frying pan. They will supply the oil/grease with this recipe.
Use one Jiffy box of corn bread mix.
Add one oz. bar of cream cheese to the recipe
Add one drained can of corn or a can of creamed corn
3 tbsp. of honey
2 eggs
The mixed recipe will be baked at 325 degrees for 1 hour. Use a whisk/fork to mix the batter and eggs together.
Use a pan or baking dish that will keep your mix below 3 inches thick. 2 Inches is perfect. Fold the top edges of bacon on top of the poured batter.
Drizzle the honey on top of the mix.
For a special kick, your camp members may like a bit hotter spice. Slice up 2 jalapeno peppers to burn off their lips.
If your camp does not appreciate this wonderful corn bread variation, shame on them!
