This refreshing salad, via Beyond the Chicken Coop, combines cooked walleye chunks with chopped bell peppers and red onions. The dressing is a blend of mayonnaise, Dijon mustard, fresh dill, lemon juice, lemon zest and black pepper. It’s a simple yet flavorful dish perfect for a light lunch or a full-on dinner. It just depends on how much you want to eat.

Ingredients 

  • ▢2 cups walleye (cooked and broken into pieces)
  • ▢½ cup bell pepper (red, yellow or orange chopped)
  • ▢½ cup red onion (chopped)

Dressing

  • ▢⅓ cup mayonnaise
  • ▢1 teaspoon dijon mustard
  • ▢2 Tablespoons fresh dill (chopped)
  • ▢1 Tablespoon lemon juice (fresh squeezed)
  • ▢½ teaspoon lemon zest
  • ▢¼ teaspoon black pepper

Instructions 

  • Place walleye, peppers, and onions in a bowl.2 cups walleye,½ cup bell pepper,½ cup red onion
  • Mix mayonnaise, mustard, dill, lemon juice, lemon zest and black pepper together in a bowl.⅓ cup mayonnaise,1 teaspoon dijon mustard,2 Tablespoons fresh dill,1 Tablespoon lemon juice,½ teaspoon lemon zest,¼ teaspoon black pepper
  • Add dressing to fish. Stir very lightly so the fish doesn’t fall apart.
  • Serve right away or cover and refrigerate to serve later.
