I didn’t think I liked coleslaw, until we made this, it’s not like for me, it’s love! Not to mention, it’s super easy!
You can buy pre-shredded carrots at the store, but freshly shredded holds the smoke better, The Milkman likes to smoke it a little longer and suggests 40 minutes if you are using pellets and 20 if you are using wood to smoke. In addition to scallions, I like to throw in small chopped pieces of fresh jalapeno. The Director thinks a little pineapple would be a nice addition!
