This week, Kokanee Quinn dives into the archives and is sharing a saucy sauce for saucy birds! This Maple Bourbon Sauce is recommended to be used with goose, pheasant, wild duck and turkey. The ingredients are:
- Pan drippings from meat, about 3 tablespoons
- 2 tablespoons flour
- 1/2 teaspoon chile paste or 1 tsp. Tabasco
- 1/2 cup water or stock
- 1/4 cup bourbon
- 4 tablespoons maple syrup
- 2 tablespoons heavy cream
- Salt to taste
