Zucchini squash grows great in Big Sky Country. As farmers close their garden plots for the season, stealthy zuc’s show up in abundance. These monster zucchinis can be a curse or a blessing.

Squash and zucchini can be multipurposed into a variety of tasty foods. If you have just been steaming or boiling squash, you are probably sick of them. Zucs can be made into bread, muffins, fritters, fried, grilled, or baked. The recipe list of zuc ideas is long and tasty. 

Before you throw out your late crop Zuc’s here is one more recipe that you must try. 

ZUC BROWNIES

½ cup of oil

¾ cups of Stevia blend or regular sugar

2 tsp. of Vanilla extract

1 ½ tsp. Baking Soda

1 tsp. salt

2 cups flour

½ cup cocoa powder, unsweetened

2 cups of shredded Zucchini

The oven can be preheated to 350 degrees. Combine the oil, sugar, and vanilla in a bowl. Now add the flour and combine. The batter will be crumbly. Stir in the Zuc shreds until completely mixed. The batter should now be moist and thick. Bake the batter in an 8×11 baking dish for 25-30 minutes. You will observe that the batter has pulled away from the pan edges. Cool and enjoy.

You could also add some chopped nuts or chocolate chips if you have them on hand. This recipe requires NO eggs or milk. The fake sugar makes it friendly for those watching their weight. The cocoa makes the flavor delicious. 

I have made this simple dessert at hunting and fishing camps for years. There are never any leftovers or crumbs left in the dish. If you add some whipped cream on top, the camp crew will thank you even more.
