It’s a pretty simple process to make the teriyaki glaze. Here’s all you need:
- Soy sauce
- Water
- Honey
- Brown sugar
- Grated ginger
- Garlic
Simmer these with water and a bit of cornstarch (thickening agent), and keep stirring! Once you can coat the back of the spoon, stop stirring and let that sauce rest god damn it!
Marinate the goose in this brine and let it sit in a glass dish for 2-4 hours at least in the fridge.
Now let’s cook it! In a sauce pan over medium heat mix these ingredients together:
- Soy sauce
- Brown sugar
- Honey
- Water
- Ginger
- Garlic
Stir this to dissolve that lovely brown sugar. In a bowl on the side, mix cornstarch and water, then slowly add to the sauce pan. Mix until it coats the back of a spoon, remove from heat.
Set your grill to 225 degrees and preheat. Once preheated, set the courters on the grill and smoke for an hour. After an hour, open up and rebaste with the teriyaki glaze. Continue smoking until the breast is 140*.
Hotter than hell! Turn that grill up to 400*. Keep basting to achieve that teriyaki glaze and then wood fire for 7-10 min for that crispy, delishy skin. Let these puppies rest before serving, and when you do, let them rest upon some steamed rice.
